Viniferm ELEGANCE is an interesting cryophilic yeast for fermentation at low temperatures. Its metabolic activity allows the release of aromatic terpenes. Unlike most enological strains, which produce fermentative aromas during alcoholic fermentation, it maintains and accentuates varietal typicity. This phenomenon is observed in both white and red wines. Its rapid lysis makes it interesting in fermented oak barrels.
